I have been Skiing and Snowboarding..
Snowboarding wins.. Even though it is a harder work out on your legs.

If you're starting fresh on the slopes, skiing is easier to get going since all you're really doing is pointing your tips downhill. However, like you said, the learning curve for skiing gets a lot steeper after a bit.
I took a snowboarding lesson awhile back. Let's just say it didn't turn out so well. I skiboarded for a few years until I sprained my knee. The bindings on early skiboards didn't release since they were intended for tricks and hard landings. Turns out that's a problem.

Ya, First day of snowboarding we had to learn how to stop. I went to the side to hard and fell and my back legs got lifted up and twisted my ankels. That REALLY hurt.
But The difference between a man and a quitter is being able to pick yourself up and keep on trying.

Well, yeah, if you are on a 1% slope all the time. Now turning, and stopping on the other hand....

Turning and stopping a snowboard was one of the most nightmarish things I had to endure. I SINCERELY doubt skiing can be much harder in that aspect considering all my friends who have tried skiing and snowboarding say snowboarding is more difficult. I only made out the point that skis may be tougher in the long run because it may be harder to land jumps because you need control of both feet instead of angling the board correctly.
